I can’t get enough of greens. Green food revitalizes me. Green also happens to be my favourite colour. I am so pleased that my daughter adores green food, too. She loves broccoli, peas, beans – she even eats raw kale and chard from the garden. A girl after my own heart.
The other week I needed a boost so I made this very green kale salad. I topped it off with a poached egg and some feta to make a nice, light summer supper for my family.
